Add the rice and stir-fry until the grains turn opaque, about 5 minutes. Stir in the soy sauce, sugar, and salt. Reduce the heat to low and add the vinegar. Cook, stirring occasionally, until the liquid is absorbed, about 4 minutes. Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork and serve immediately.
Cool and Dry the Rice Thoroughly
If you are using a rice cooker, follow the instructions provided by the manufacturer. If not, rinse the rice well under cold running water. Drain thoroughly. Place the rice in a fine mesh strainer and shake gently to remove any residual moisture. Do not squeeze the rice dry. Cooking Method: Place the rice in a heavy skillet or woks over medium-high heat and dry roast the rice until it turns opaque, about 3 minutes. Stir in the broth, soy sauce, sugar, salt, and pepper. Bring to a boil, reduce the heat to low, cover, and simmer until the liquid is absorbed and the rice is tender, 15 to 20 minutes. Let stand, covered, for 10 minutes. Fluff with the back of a spoon and serve immediately.
